Kick-ass koreansk restaurant har indtaget Vesterbro

Skål i soju og spis dig mæt i koreanske highligts. Koreanere har en kaskade af gastronomiske gimmicks og særlige traditioner, når de spiser mad. Man skal dække glasset med hånden, når man drikker af små glas. Man må ikke hælde op til sig selv, man tager imod med begge hænder, hvis en ældre person rækker en noget - og man drikker ALDRIG alene, men skåler. Noget de forøvrigt gør rigtig meget i Korea, som er det land i verden hvor, der bliver drukket mest per indbygger. Derfor har de faktisk også opfundet konceptet anju. Anju er et koreansk begreb, der betyder at spise mad og drikke alkohol. Den alkohol må meget gerne være et glas soju. Det kan sagtens være, at du aldrig har hørt om Soju, men det er faktisk verdens mest solgte spiritus. Det er en destilleret vodkalignende koreansk alkohol baseret på ris, som på grund at sin lidt søde, runde og rene smag nydes med mad. Den fås i seriøst mange udgaver - både ren og med tilsat smag og altid i den karakteriske grønne flaske. Og hvis det er helt rigtig, så skal soju serveres i en såkaldt hurricane, hvor den rystes med en særlig teknik, så der opstår en spinnende malstrøm indeni flasken, som ifølge traditionen sender de onde ånder væk. Man kan også blande den med øl, og så får man en såkaldt somaek. Ja, der er nok at lære, hvis ikke man ikke lige er hjemme i Korea-lingo på madfronten. Ejerne bag Vesterbros koreanske restaurant Ssam, Jeff Larsen og Jeong Hwa, vil nemlig gerne lære Vesten og især København nogle af alle de her koreanske spise- og drikketraditioner, der dyrkes i det store land. Så de har åbnet Ssam på Colbjørnsensgade lige bag Hovedbanegården. Herinde kan du lære alt det, du ikke vidste, du gerne ville lære om det store land 8000 km mod øst. Læs også: Nørrebro får kæmpe spansk restaurant og vinbar i nedlagt fabrik Jeff er selv adopteret fra Korea, har uddannet sig til ingenør her i Danmark og har så været udstationeret otte år i Korea, hvor han mødte sin koreanske kone og kok - kendt under navnet Grace. Hun har altid gået med en drøm om at åbne egen restaurant, og Ssam er altså blevet en realitet. Restauranten ligger i Colbjørnsensgade blandt stripklubber og hoteller og er i to etager og er fuldkommen istandsat af parret selv i en moderne stil. Den svugne trappe ned i den høje kælder ligner noget Arne Jacobsen kunne have begået, og hernede er der en hjørnebar samt et par borde. Ovenpå er der flere pladser og opdelt i masser af hyggekroge, fritlagte mursten og god belysning. På toiletterne hænger der farverige plakater med K-pop og koreanske berømtheder. Menukortet har en del af de mest kendte retter på - blandt andet bibimbap, kimchi og KFC (nej, IKKE Kentucky, men Korean Fried Chicken, som er en kyllinge-kunstart i sig selv) at byde på, og hvis man også lidt ligner et dansk spørgsmålstegn, når man ser de ord, så hjælper tjenerne meget gerne med både at forklare mad, kultur og traditioner om, hvordan, hvor meget og så videre. Hele teamet herinde er fra Korea, og forklarer hjertens gerne, Jeff taler dansk, ellers på engelsk. Priserne ligger for de fleste retter under 100 kr. og der er også flere vegetariske muligheder, hvis man ønsker det. En stor nok anbefaling af Ssams udgave af den koreanske street-food buns, kan næsten ikke gives. Briocheboller bløde som skyer krammer bulgogi ribeye-kød med smeltet mozarella og andet godt i ægte himmerige-mundfulde.

Blooming Bibimbab – 비빔밥 -95 kr

Freshly selected vegetables consisting of bean sprouts, carrot, zucchini,  mushrooms, cucumber, spinach and egg. Served with korean purple sticky rice and gochujang in a large bowl. Veggie option  
Topping: Bulgogi Beef, Spicy Chicken, Honey Pork

Dolsot Bibimbab – 비빔밥- 105 kr

Freshly selected vegetables consisting of bean sprouts, carrot,  zucchini,  mushrooms, cucumber and egg. Served in a traditional stone pot. Premium toppings are available as: Rib Eye Bulgogi Beef, Spicy chicken Spicy pork Bacon kimchi White korean tofu Red korean tofu
Bibimbap, which translates to "mixed rice" in Korean, is a signature Korean dish that endures because of its variability. For a meal in a bowl, a choose-your-own combination of sauteed vegetables, rice, sliced meat or tofu and a garnish of fried orsunny-side egg has something for everyone. This particular dish has hit all over Europe and USA, as the new super healthy food of this decade.

Korean fried chicken – 양념 치킨 fra 45 kr

KFC - Korean fried chicken. Perfectly house made chicken tender pieces with a variety of different marinade combinations. Served with slaw and salad. Three types are on the menu: Sweet and Spicy, Classic korean sauce that gives the chicken a delicious mixture of both flavours. Soy and Ginger, Home made soy sauce, mixed up with fresh ginger. Snowy, Creamy refined mayonnaise with a blend of black fermented garlic, lemon and a dash of roasted onions.

SSAM Buns – 빵- 105 kr

SSAM Buns are 2 pieces, stuffed with Bulgogi Ribeye Beef and melted Mozarella cheese. All come with spicy pickled cucumber and SSAM scallion chili salsa.
The western buns concept has been adapted to suit the street food culture of Korea. This style bun can be seen in most streets in seoul.

Kimbap – 김밥- 105 kr

Super healthy and tasty vegetable seaweed rice roll, with your choice of filling. Cream cheese/Walnut  -  Tuna/Mayo - Beef Bulgogi - Spicy Pork      
Kimbap is one of the most consumed snack and picknic dishes in Korea. Used for lunch boxes and dinner alike. Resembles a sushi roll, but with the taste and kick of korean spices and veggies. Truly a Korean Classic.

Kimchi Jiggae – 김치찌개- 95 kr

A hearty soul-warming stew made with kimchi, pork belly and tofu

   
Kimchi Stew is one of the most loved dishes in Korea. Even when you don't have much appetite, this is sure to fix it. You'll have no problem finishing a big bowl of rice with Kimchi Stew! As long as you have nicely fermented Kimchi, you can't go wrong with this one.

Chulpan Deopbap – 철판 덮밥- 105 kr

Korean fried rice dish with various toppings of your choice. All served in a sizzling hot iron skillet.

We serve full bottles, shots and cocktails. A variation of plum, apple, peach and lemon sojus. Baek Seju and Maewahsu also on menu. Korean Makgeolli rice vine.
Soju is the best known liquor from Korea.  It is distilled, vodka-like, rice liquor with high potency and often flavored similarly. It is smooth and clean in taste, which makes it easy to drink in combination with various Korean dishes. The main ingredient of soju is rice, , wheat, barley, and sweet potatoes.
